Moroccan meatballs

During my many trips to Morocco i've picked up some recipies that i really enjoyed, and this is one of those! It's so tasty and easy to make.

Ingredients:

Sauce:
4-6 tomatoes
Oil
Black pepper, sweet pepper, turmeric, salt
Fresh parsley and coriander

Meatballs:
400-500g minced meat
Oil
Same spices and herbs as in sauce

How to make:

1. Grate tomatoes and put in tagine or covered frying pan. Add oil and spices. (not herbs)
2. Mix all the ingredients of the meatballs and make small balls (like fingertips). Add the balls to tagine and cover up. Cook until ready, stirr the sauce a few times and add more oil if it seems to dry up. When almost done asd the herbs to the sauce. Serve with bread and enjoy.

Tip: if you want, you can add potato wedges same time with meatballs.

fetameatballs

I love this recipe, usually I don't like meatballs at all but this version is just too good. Enjoy it!

Ingredients:

- 400g minced meat
- 1 egg
- 1dl of breadcrumb (korppujauho)
- 1dl of cream
- ketchup
- 2-3 garlic nails crushed
- salt, pepper, sweet pepper and herbs
- 50-100g feta cheese in small pieces

These ingredients will make about 12 meatballs.

How to make:

1. Mix minced meat, egg and breadcrumb, add rest of the ingredients. Mix well.
2. Make balls and place those in oven sheet.
3. Bake in oven 15-20 minutes in 200 degrees.

Easy Chicken casserole

This dish is easy to make, just mix the ingredients and put in oven. You don't need to be checking the food all the time so it leaves you time to do other tasks. It's simple and good!

Ingredients:

- 6-8 potatoes
- chicken strips in marinade (I use honey)
- food cream (I use 4 cheese cream)
- salt, pepper, sweet pepper, herbs.. any spices you like

How to make:

1. Fry the chicken so it gets some colour.
2. Peel and cut potatoes to juliette pieces.
3. Heat the oven to 225 degrees.
4. Mix the ingredients and put in oven for 1 hour or until done.

note: if you want, add some blue cheese or some other flavoured cheese to give more taste. You can also use fresh herbs.

Spaghetti á la Mari :)




This is very simple dish that my family used to make since forever, I've changed it a bit to fit my taste and everyone can do the same aswell. I mean who doesn't know how to make spaghetti bolognese?

Ingredients:

Spaghetti
salt
olive oil

sauce:

ca. 500g minced meat
2dl creme fraiche/smetana/cooking cream
ketchup/tomato sauce
spices (salt, pepper, sweet pepper, garlic, herbs...)
water

How to make:

Prepare the spaghetti according to packet instructions, add salt and a little bit of olive oil.

Fry the minced meat ready and add spices. Mix the creme fraice with meat and add ketchup. Check the taste and add more spices if needed. If the sauce is heavy add some water.



See, that's all you have to do and dinner is ready in 10 minutes. Easy and still taste good. You can add some vegetables to it if you like, such as onion and carrots..

Easy Noodle Wok

This Noodle wok is good when you're in a hurry or lazy to cook something that takes longer time. It can be ready in 10-20 minutes and it's very tasty. This one I made with salmon but usually I like to use chicken or some meat with it. I didn't put much vegetables this time since my husband asked me not to but the recipe I put here includes more of those. Also good for vegetarians if you use only noodles and vegetables!

Ingredients:

- Noodles
- salmon/tuna/chicken/meat/shrimps etc.
- 300g wok vegetables
- sweet & sour sauce

How to make:

1. Prepare the noodles according to the packet instructions.
2. Fry the vegetables and meat (if you use) in oil. If you use frozen vegetables and salmon like I did then fry the vegetables first since they take more time than salmon.
3. Add noodles in wok and mix, add the sweet & sour sauce and mix well.
4. Enjoy!
